Kitchen use requires hygiene caution

The application of kitchen hygiene might be straightforward but its importance cant be underestimated, it has been suggested.Writing for BBC News, Professor Hugh Pennington has discussed the health risks posed by insufficient attention to hygiene regarding raw meat, particularly chicken, on chopping boards and in sinks, for example. Many an upset stomach is caused by Campylobacter each year which, while not generating such a high level of media attention as the likes of E.coli, still poses a significant risk to health.Anyone who doesnt wash their hands after handling poultry meat and doesnt disinfect the chopping board before preparing the salad is likely to add themselves or members of their family to the diarrhoea statistics, Professor Pennington warns.Using a Franke tap and sink to clean one of the companys range of chopping boards, available in materials like glass or wood, is an easy way of keeping kitchen hygiene high.Professor Hugh Pennington is an Emeritus Professor of Bacteriology at the University of Aberdeen.
